Pressure Cooker Pork Roast Tips

  • Flat pork roasts cook more quickly than round pork roasts.
  • When a cookbook specifies a range such as 30 to 35 minutes, start with the shorter time and add cooking time if necessary.

Pork Roast and Vegetables

You need:

  • Skillet

  2. Brown the pork roast in a hot skillet, searing it on all sides in a tablespoon of oil or less. Deglaze the pan with a half-cup of water, stirring to get up all the flavorful cooked-on brown juices, then pour the liquid back into a measuring cup. Add water or broth to reach the minimum recommended amount of liquid for 40 minutes of cooking in your pressure cooker.
  3. Place the rack in the pressure cooker. Position it at least 1 inch above the level of the liquid for steam roasting. Prop it up on balls of aluminum foil to reach the correct height, if necessary.

  7. Open the pot again, using the same quick-release or cold water method, and remove the vegetables and the roast. Let the pork rest for a few minutes before carving, for the juiciest result. If you wish, strain and skim the fat from the cooking juices, and use those as the base for a sauce.

Yields: 8 servings

Ingredients:

  • 3- to 3-1/2 lb. pork shoulder roast
  • 1 tsp. caraway seed, crushed
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. vegetable oil
  • 1 onion, cut into wedges
  • 1 cup water
  • 3/4 cup apple cider OR apple juice
  • 3 medium cooking apples, cut into wedges

Directions:

  1. Trim any visible fat from the meat and pat dry with paper towels. Set aside.
  2. In a small mixing bowl combine caraway seed, salt, and pepper; rub this mixture over roast.
  3. In a 4- or 6-quart pressure cooker heat 1 Tbsp. oil over medium heat or use brown function.
  4. Cook meat until brown on all sides, adding more oil, if necessary. Remove the meat from the pressure cooker and set aside. Drain off fat.
  5. Place the trivet or an oven-proof rack in the pressure cooker.
  6. Return the meat to the pressure cooker and add the onion, water, and apple cider.
  7. Lock lid in place and bring the cooker up to high pressure; cook for 45 minutes.
  8. Allow pressure to come down naturally, then carefully remove the lid. Transfer meat and onion to a serving platter; keep warm by covering with foil.
  9. Add apples to pressure cooker and bring to boiling. Cover loosely (do not lock lid) and cook over medium heat about 5 minutes or until apples are crisp-tender. With a slotted spoon, remove apples to serving platter with pork roast and onions. Serve immediately.
